APCA Personal Chef Summit
The First "Four Corners" Personal Chef Summit

The First and Only Meeting of its kind, anywhere!

Personal Chefs enjoying a presentation at Summit San Diego - Feb 99 Ready for Another Day at the Summit

More Scenes from the Summit

Held February 20 - 21, 1999 San Diego, California

What started out as a spur of the moment visit by some chefs wanting to escape the "Frozen Tundra" where they live, for a weekend in Southern California, has grown to a major policy setting conference. Chefs from the four corners of our country exchanged information and ideas and "sharing their strengths" in order to grow this industry we are all committed to, in a professional responsible way, since we are all in it as a career choice. This proved to be a powerful conference that is sure to forward the action for the entire industry in what APCA has declared to be the "Year of the Personal Chef".

We held the First Ever "Four Corners" Personal Chef Summit in Beautiful San Diego, CA, the weekend of February 20-21, 1999

In addition to offering a full Seminar for new Personal Chefs, the weekend offered roundtable topics, and policy conferences for working Personal Chefs.

This is an outline for the weekend.

Saturday, February 20: 9AM - 4PM Seminar "How To Start Your Own Personal Chef Service" (PC 101)©

or

Saturday, February 20: 9AM - 4PM

Over the course of the weekend roundtable groups on these topics were presented:

  • Business Planning - applying lively business strategies to secure your success.
  • Business Operations - efficiency in your work habits.
  • Marketing for the Millenium
  • cooking Day - how to make an impression on your clients and keep them coming back for more.
  • Mis en Place - how all your menu recipes tie together and why it's important to your bottom line.
  • How to use Word of Mouth marketing and what it means to your success.
  • Directions to Take: Personal Chef Service vs HMR?
  • How do you handle unscrupulous competitors. Taking a stand on integrity in the industry.
  • Networking: This is vital to your success as a Personal Chef. There was plenty of time to exchange thoughts, ideas, and real world experiences.
  • Internet Marketing 101
  • After all the information that was exchanged during this exciting day, we all needed some time to relax, and since we're only 14 miles from the International Border, there was an authentic Mexican Feast and get-together on the front patio (by the pool and spa) of the beautiful private estate where the Summit takes place. Can you say Margarita? This is sure to be a fun event, and a chance for you to get to know the real movers and shakers in the industry. OLE!!

Sunday, February 21st - We filmed professional-quality training video demos in a State of the Art Teaching Kitchen.

Later, a late lunch at one of Pacific Beach's top restaurants where we'll sample their award winning homemade pastas and experience Carol's specialty - Timpano - as seen in the movie 'Big Night'.

It's was a dynamic weekend! We had Personal Chefs from all four corners of the country participating in this event.

Sharing our strengths and agreeing on direction is forwarding the action for all of us in growing our businesses into successful ventures, and insure the future growth and success of our industry. It was a powerful experience!
